I made this for a dinner with some friends and they loved it. Khir is a traditional dessert from India. This definitely went well as the dessert for chicken masala.
Ingredients for Sweet Potato Khir
1 pinch saffron
8 cups plus 1 tablespoon milk
1/2 cup ghee
2 cups sweet potatoes, finely grated
1/4 teaspoon ground cardamom
1 cup sugar
Preparation Instructions
- soak the saffron in 1 tablespoon milk for 10 mintues.
- On the stove, heat a large pot. Add the ghee and sweet potatoes, stirring occasionally until the potatoes are light brown and fragrant.
- Pour the remaining milk over the potatoes slowly, stirring well. Add the cardamom, soaked saffron, and sugar. Stir a few times and bring to a boil.
- Continue stirring to keep the khir from sticking to the pot as it thickens at a gentile boil, about 5 minutes. Turn off heat and cover until ready to serve.
