This recipe is for a wonderful side dish that even your kids (or husband) will eat. The carrots end up being very sweet and the ginger adds a really nice spike to the flavors.
Ingredients for Ginger Carrots
- 1 lb. carrots
- 1 tsp. freshly grated orange peel
- 1/4 cup fresh orange juice
- 1 TBS butter
- 1 TBS honey
- 1 tsp. grated fresh ginger
- 1/4 tsp. salt -- to taste
- pinch of white pepper -- to taste
- minced parsley - garnish
Instructions for Cooking Ginger Carrots
Place carrots in a large skillet, cover with water and bring to boil.
Reduce heat, cover and simmer until crisp-tender, drain.
Add zest, juice, butter, honey, ginger, salt and pepper and stir over medium-high heat until carrots are glazed. Garnish with minced parsley.

Kumquats
I like this recipe and for a twist I use thinly sliced kumquats (dime sized orange-like fruit), more ginger (2 TBSP) and some thai fish sauce or soy sauce instead of the salt. I've also had success adding a little balsalmic vinegar but less ginger.
I've thought of trying to add a few apples at the very end becuase I tend to like ginger/orange sauce with apples but I haven't tried it yet. I may tonight, I have a few that need to be used.

Holiday Meals
Hi, thank you for this receipe.
I used to make these for holiday meals and somewhere along the way I lost the "touch". This year I'm hosting our Thanksgiving meal and wanted to reintroduce this tasty dish. I read several that were "almost right" finding yours was an EUREKA moment, even to simmering the carrots in a skillet rather than the usual pot - easier to control the done'ness.
The only change I will make is to mix the glaze this evening to cut down on last minute kitchen activity.
