Sweet Potato Khir - A Sweet Dessert Soup Recipe

I made this for a dinner with some friends and they loved it. Khir is a traditional dessert from India. This definitely went well as the dessert for chicken masala.

Ingredients for Sweet Potato Khir

1 pinch saffron
8 cups plus 1 tablespoon milk
1/2 cup ghee
2 cups sweet potatoes, finely grated
1/4 teaspoon ground cardamom
1 cup sugar

Preparation Instructions

  1. soak the saffron in 1 tablespoon milk for 10 mintues.
  2. On the stove, heat a large pot. Add the ghee and sweet potatoes, stirring occasionally until the potatoes are light brown and fragrant.
  3. Pour the remaining milk over the potatoes slowly, stirring well. Add the cardamom, soaked saffron, and sugar. Stir a few times and bring to a boil.
  4. Continue stirring to keep the khir from sticking to the pot as it thickens at a gentile boil, about 5 minutes. Turn off heat and cover until ready to serve.
